As you could see in the First Part of this series of articles, the experience of arrival and welcome is very good in this restaurant, feeling at all times like in a gastronomic amusement park.
Both the welcome snacks (the very original and refreshing homemade mead, perfect for a hot summer day like that was) and the snacks on the menu were good, highlighting the "Crispy red mullet foie tartlet" and the "Flickering custard, Valencian lemon with dill and Ancient Salting".
Now it's time for some main dishes, and before the outstanding "Tuna Sequence" of the video, there are some good dishes before through wich I'm going to drive you by.
For the following "Tuna Sequence" that you can see in its entirety in the video, they use an excellent bluefin tuna in various preparations, to which they also add as a topping (in the first sequence) the dried heart of the tuna ("sea truffle" in the gastronomic world), grated at the moment.
They pair the sequence with a homemade tomato drink, from a very old recipe, in which they submerge the tomatoes and secret spices in clay amphoras underground and leave it to ferment for several months.
In the next article we will go with the rest of the main dishes, the desserts, the petit fours and the bill.
