If someone asks me about the quintessence of Vietnamese cuisine, I will not hesitate to recommend noodles. It is undeniable that our noodles are so fabulous.

Perhaps Vietnam is the cuisine with the most diversity of noodle dishes. There are so many types of noodles that we have to call with the names of the regions to make it distinguishable. Do you recognize that in the names of Vietnamese noodles? Like Phở Hà Nội (Pho with Hanoi style), Phở Nam Định (kind of phở in Namdinh province) , Bun Bo Hue (Hue style beef noodles), Bún Bò Nam Bộ (southern style beef noodles), ....

Most of time, the name of the dish always comes along with the name of the place or region, as a signature dish to represent the cuisine arts of the whole place.


If you follows my blog long enough, you will know that I'm a big fan of noodles, especially Pho and Bún Bò (Beef noodles). But during my recent trip to Da Nang, I was really impressed by a fairly famous dish of the central region - Mì Quảng Ếch.

Mì means noodles, Quảng means Quảng Nam - a province in central of Vietnam (it is kind of signature dish of Quang Nam province - the place I was supposed to have it, but I had it in Danang. xD. Whatever. It was delicious tho), Ếch means frog. Ermm. Frogg?? It doesn't sound awesome with foreigner, does it? But it’s kind of my thing. xD


I went to a well known restaurant named “Bếp Trang” - Trang’s kitchen. The most famous place for Mì Quảng Ếch in Danang. I know this restaurant via an advertisement and there are so many celebrities came here for its signature dish.

I think that’s why food here is quite expensive compared to the common price in Danang - place known for cheap and fabulous food.


I and my friends came here for Mì Quảng Ếch. But there are quite a few things else, different types of Mì Quảng to enrich your options.

Actually, it is just different in the type of protein comprising of frog, chicken, shrimp, pork, fish. But still same in noodles and cooking style. We three girls order a combo of five types above even though it is recommended for a group of 4-5 people. xD.

The noodles with frog is not overrated and it is tasty as expected. Frog really stands out from other proteins like chicken, shirmp, pork, fish. No doub that it is the signature dish of this restaurant.

Frog sounds kind of disgusting with some people, I know. But trust me its taste doesn't disgust as it sounds. Hahaa. With my palate, it sometimes tastes even better than chicken and pork. xD.

The colour of the noodles is made from saffron and the size of Mì Quảng is thicker than any kind of Vietnamese noodles, I believe. I feel like Mi Quang is in between of regular noodles (the ones served with a lot of broth) and dry mixed noodles (without broth). There is just a half bowl of broth, enough to deep vegetable and make the noodles wet. Mi Quang is always served with peanut and girdle cake.

The chewy noodles, tender frog and crispy girdle cake create the harmony, balance of an amazing dish. But the seasoning presenting the central taste with right amount of broth, chili, lemon, green onion and peanut are the things that define the incredible taste of the dish.


If you are in Dang or planning to visit, put this one in your must-try-list. Believe me, you don't want to miss it. It doesn't need to be in this restaurant, just try to have Mì Quảng Ếch. :D
