Cycling from Denmark to Portugal is bound to create some reality vs expectations scenarios that doesn't really match all the time.
The clear picture of you enjoying a tasty meal while watching the sunset, sharing a glass of some local wine you brought earlier. Can easily be replaced with the cruel reality of you, hunkering down in the bottom of some wet forest while the weather outside absolutely pours the rain down on you.
Accepting the conditions you are given
It really isn't a choice you have. To make the best of a bad situation is a bit cliché but something you have to do if you want The whole tour to be memorable.
That means don't just feel things are unfair because you have a hard headwind, if the hills are a bit too steep for your taste or the rain chooses to go on for longer than you had expected. (all of these really classical cycle challenges)
Hell, even if all you face all of these at once you might as well just take it with a laugh and think ahead that in a day or two this probably will be a fun moment to think back of when you had all going against you and you chose to sing out loud "dancing in the rain".
Often the tough times are those you will look back at and tell stories about, whether you enjoyed them or not.
Maybe we shouldn't chase the summer.
Currently we are in France soon to head through Lyon and then get to the coast of the Mediterranean sea. It would be a lie I didn't feel eager to get there faster to enjoy the beaches and the eternal sun and warm weather. In contrast to now when most of our days are either rain or cloudy.

But maybe, just maybe it would be worth it to also enjoy the present. To enjoy the green & fresh forest the rain are providing us, the excuses of going into a bakery to have a warm drink of coffee or just still be able to carry Mars bars without them melting, for example.
Jokes aside, what I'm trying to say with all this is we are having a lot of bad weather right now but in the end that's what one should expect when sleeping and being outdoors 24/7, you can't just have the easy parts of nature!
