Trip to South America no. 88 Ecuador – Coffee plantation

At the turn of February and March 2020, the coronavirus was becoming bolder in the world. He made himself at home in Europe, in Italy, the first illnesses resulted in the depletion of shop shelves of basic products. It is not there yet in Poland, but people are starting to panic, the stock market has the worst week in 12 years, and we were told that a tourist returning from Italy brought the first case of coronavirus with him to Ecuador.
In such interesting times, on Sunday, March 1, since dawn we met the host, who took us to his mini coffee plantation located deep in the mountains on the Ecuadorian-Colombian border. He gave us a basket of vegetables, a fruit basket, house keys and a short instruction on how to grow and produce coffee. Deprived of access to the Internet, telephone, TV and radio, we spent a whole week there, and our only contact with the world was the farmer Guido, who lives on the other side of the mountain in a village about 4 km away. He visited us every day to help with work and reveal the secrets of coffee production.

Na przełomie lutego i marca 2020 roku koronawirus coraz śmielej poczynał sobie na świecie. Na dobre rozgościł się w Europie, we Włoszech pierwsze zachorowania pociągnęły za sobą konsekwencje w postaci ogołocenia sklepowych pólek z podstawowych produktów. W Polsce jeszcze go nie ma ale ludzie zaczynają popadać w panikę, giełda odnotowuje najgorszy tydzień od 12 lat, a nam powiedziano, że pewien turysta wracający z Włoch przywiózł ze sobą pierwszy przypadek koronawirusa do Ekwadoru.
W takich to ciekawych czasach w niedzielę 1 marca skoro świt spotykaliśmy się z gospodarzem, który zabrał nas na swoją mini plantację kawy położoną głęboko w górach na pograniczu ekwadorsko-kolumbijskim. Dostaliśmy od niego kosz warzyw, kosz owoców, kluczyki do domku i krótką instrukcję jak uprawiać oraz produkować kawę. Pozbawieni dostępu do internetu, telefonu, telewizji i radia spędziliśmy tam cały tydzień, a naszym jedynym kontaktem ze światem był farmer Guido mieszkający po drugiej stronie góry w wiosce oddalonej o ok 4 km. Odwiedzał nas codziennie, po to aby pomagać przy pracy i zdradzać tajniki produkcji kawy.

During the first meeting, the farmer Guido announced that we were not allowed to go down to the village because people were afraid that we would catch them with the coronavirus. The neighbors also reportedly turned away from him - he would still bring the virus to the village and there would be a tragedy ... So we spent the last week deep in the Ecuadorian mountains, away from the whole world.

What have we been doing this week? Lots and lots of different things, but there was no time to get bored. First of all, we learned about the techniques of coffee production from A to the letter R, S, maybe T. Starting with the care of coffee bushes, which in this area, at this altitude, about 2,000 meters above sea level. have ideal conditions for the development and production of the highest quality coffee beans. In order for each bush to grow well, you need to check it regularly and pick any parasites from it. One of the parasites on coffee bushes are orchids - the same orchids that are grown in our country in pots and admired for their beautiful flowers.

Przy pierwszym spotkaniu farmer Guido zakomunikował, że nie wolno nam schodzić do wioski, bo ludzie boją się, że ich zarazimy koronawirusem. Od niego sąsiedzi też się ponoć odwrócili - jeszcze przyniesie wirusa do wioski i będzie tragedia... Tak więc spędziliśmy ostatni tydzień głęboko w ekwadorskich górach z dala od całego świata.

Co robiliśmy przez ten tydzień ? Dużo bardzo dużo różnych rzeczy, ale nie było czasu na nudę. Po pierwsze poznaliśmy techniki produkcji kawy od A do mniej więcej litery R, S może T. Począwszy od pielęgnacja krzaków kawy, które w tym rejonie, na tej wysokości mniej więcej 2000 metrów n.p.m. maja idealne warunki do rozwoju i produkowania najwyższej jakości ziaren kawy. One of the biggest surprises of my stay in South America is that I got to know the taste of the coffee fruit and I must admit that it is unique, even addictive. Very cute and addictive. After collecting the red fruits, use a simple grinder to peel the fruits and separate the pips of interest from the shells. First, the obtained seeds should be thoroughly rinsed of the remaining juice, then spread out on large nets and dried in the sun. And it's ready! Such coffee can be packed into ovens and roasted to the appropriate degree of roasting. Recently, more and more often such green coffee is sent to Europe in its green form, where only here, in fashionable roasteries, professionals will try to make it in a craft manner and achieve better taste results.

Gdy krzak kawy jest zadbany to odwdzięcza się swojemu właścicielowi tym, ze wydaje bardzo małych czerwonych owoców w których znajdują się pestki, które my wykorzystujemy jako ziarna kawy. Jednym z największych zaskoczeń pobytu w Ameryce Południowej jest to, że poznałem smak owocu kawy i musze przyznać, że jest on niepowtarzalny, wręcz uzależniający. Bardzo słodki i wciągający. Po zebraniu tych czerwonych owoców za pomocą prostej maszynki obieramy owoce i oddzielamy od łupinek interesujące nas pestki. Pozyskane pestki należy najpierw dokładnie wypłukać z resztek soku, a następnie rozłożyć na wielkich siatach i wysuszyć na słońcu. I gotowe! Taką kawę można już pakować do pieców i wypalać do odpowiedniego stopnia wypalenia. Ostatnio coraz częściej taka zielona kawa jest wysyłana do Europy w swojej zielonej postaci, gdzie dopiero tutaj w modnych palarniach fachowcy będą starali się zrobić to w sposób kraftowy i uzyskać lepsze efekty smakowe.
