Food Culture in Iraq | 伊拉克的饮食文化

It's always fascinating when you enter a new region the food culture can change drastically. This diary entry is about Iraq Kurdistan's food. All in all we had 3 weeks in this region and passed through three major provinces in the north of Iraq.

Naan, Non, 囔… Bread

We'll start with bread. Every place have different style and shape of bread. In the first photo there are three types of bread: thick flat bread, soft flat bread and pointy pocket bread. 我们会从面包开始。每个地方都有不同的风格和面包的形状。在第一张照片中有三种面包：厚厚的平面面包，软平面面包和尖头口袋面包。

Pointy bread (سەمونی بەردی)

The pocket bread is hallow inside so when you tear it in half, you'll get two pockets to put in your favourite fillings. 口袋面包是万圣节，所以当你把一半撕开一半，你会得到两个口袋放在你最喜欢的馅料中。

Rehydrated flat bread (نانی تیری)

The flat soft bread was definitely something unique to the Kurdish cuisine. You buy it dried. Massive disc the size of our bike wheels can be purchased in a big stack. They last for a year approximately, and only take 5 minutes to prepare.

Water is sprinkled onto both side of the disc and then you cover it in a cloth. Best to be gentle with the bread because they'll crack and rip apart. After about 5 minutes the bread will have absorbed the water and become soft.

Chai, Çay，茶… Tea

It's a huge tea drinking culture here. Drinking socially on the street is a popular way to hang out with friends. Making tea with wood fire is popular in Sulaymaniyah, often with beautiful display of the fire and teapot. They love their tea strong so they have lots of sugar too! We have learned to ask for tea without sugar (chai bei seker).

Mealtime 吃饭了

We have eaten at both restaurants and Kurdish homes. One thing we have noticed was the number of things on the table. Here are photos to show what we mean...

Our meal were accompanied with many things:

• cucumber tomato salad
• baked beans in tomato sauce
• fresh hot bread
• chickpeas soup
• cooked bulgur wheat
• freshly sliced tomato, cucumber, spring onions
• assorted pickles
• yogurt drink
• juice or soda drinks

我们的膳食伴随着许多事情：

In a restaurant with our host Saroo, the table literally had no space left for anymore food so we had to say goodbye to some half eaten sides. Everything was delicious but unfortunately we couldn't eat every single thing on the table. Our host said some food will be used to help the refugee camps nearby.

Name and Shame 一个大耻辱

Just when you thought bottled water was bad, then here comes another attack on mother nature. Aside from the fact that we love cycling, one of the reason we avoided flying was because of the wasteful airline food packaging. Single use plastic is a big problem and these little cups of water are an awful example.

Hopefully once we reach Europe we'll see less and less single use plastic being excessively used.

Kurdish Döner 库尔德·德纳

Not every döner kebab comes wrapped in bread with salad and sauce. These are thinly sliced meat from a vertical rotisserie. We ate it with rice and many sides instead of in flat bread… gluten-free friendly. 每个Döner Kebab不是都用沙拉和酱汁包裹在面包上。这些是从垂直的旋转鱼片薄的切肉。我们用米和宽阔的人而不是平坦的面包，无麸质。

Stuffed Eggplant | Sheikh Mahshi (شيخ محشي)

Slowly baked in the oven, the eggplant is filled with sauteed meat pieces and topped with slices of tomatoes. The sauce is full flavour from the sweet tomatoes, eggplant and meat. We were so full we couldn't touch the bread to soak up all the sauce.

Dolma (دۆڵمە) and Yaprach (یاپراخ)

From the outside you can see cucumber, onion and vine leaves. Inside they are stuffed with meat, rice, onions, garlic, mint, cabbage and anything else compatible. This can be served hot or cold, and with yoghurt.

Baklava

It is a very sweet dessert pastry, made with filo, nuts and syrup. If you're not a sweet tooth you'll only want 2, and no more! This sweet is popular in the Middle East and Central Asia.

When you take a bite into the baklava, it is soft and "wet" with syrup. By all means it's delicious, but some people might be put off by how drenched in syrup this sweet is.
