Tea: from the shrub to the counter.

Around 1925, during the Japanese colonial period, Assam tea came from India to Taiwan. The region around Sun Moon Lake in central Taiwan offers ideal conditions for the cultivation of aromatic black tea due to its location and climatic conditions.

Tee: Vom Strauch auf den Ladentisch

Um 1925, während der japanischen Kolonialzeit, gelangte der Assam-Tee aus Indien nach Taiwan. Die Region rund um den Sonne Mond See in Zentral-Taiwan bietet aufgrund der Lage und der klimatischen Bedingungen ideale Voraussetzungen für den Anbau des aromatischen Schwarztees.

Yuchi Township was considered the hometown of black tea, which was also exported because of its excellent quality. In the 1970s labour costs rose and the import of cheap tea leaves from India and Sri Lanka (formerly Ceylon) forced more and more tea farmers to switch to more profitable crops such as betel nuts.

Yuchi Township galt als die Heimatstadt des schwarzen Tees, der aufgrund seiner ausgezeichneten Qualität auch exportiert wurde. In den 1970er Jahren stiegen die Arbeitskosten und der Import billiger Teeblätter aus Indien und Sri Lanka (früher Ceylon) zwang immer mehr Teebauern auf die Kultivierung lukrativerer Nutzpflanzen wie Betelnüsse umzusteigen.

Sun Moon Lake Antique Assam Tea Farm in Yuchi Township also had to close down in 2003. However, there remained five employees who started growing organic Assam tea. The old tools and machinery were preserved and the traditional tea factory was opened to visitors. A tour of the factory halls is an encounter with the past, in which more than 200 employees were responsible for the production of the tea with its strong and spicy aroma.

Auch die Sun Moon Lake Antique Assam Tea Farm in Yuchi Township musste 2003 ihren Betrieb einstellen. Alllerdings blieben fünf Mitarbeiter, die mit dem Anbau von biologischem Assam-Tee begannen. Die alten Werkzeuge und Maschinen blieben erhalten und die traditionelle Teefabrik wurde für Besucher geöffnet. Ein Rundgang durch die Fabrikshallen ist eine Begegnung mit der Vergangenheit, in der mehr als 200 Mitarbeiter für die Produktion des Tee mit seinem kräftigen und würzigen Aroma verantwortlich zeichneten.

Withering

The harvested tea leaves are dried on slatted frames covered with jute. This removes about 30% of the humidity from the leaves. Depending on the humidity content, this process takes 14-18 hours.

Welken

Die geernteten Teeblätter werden auf Lattengestellen, die mit Jute bespannt sind, getrocknet. Dabei wird den Blättern rund 30% ihrer Feuchtigkeit entzogen. Je nach Feuchtigkeitsgehalt dauert dieser Vorgang 14-18 Stunden.

Rolling

After drying, the tea leaves are rolled in special machines. The cell walls are broken open and essential oils are set free.

Nach dem Trocknen werden die Teeblätter in speziellen Maschinen gerollt. Dabei werden die Zellwände aufgebrochen und ätherische Öle freigesetzt.

Roll-Breaking

The moist and lumpy leaves are then loosened with the aid of vibrating or screening machines.

Auflockern

Anschließend werden die feuchten und klumpigen Blätter mit Hilfe von Rüttel- oder Siebmaschinen aufgelockert.

Fermenting

After rolling, the leaves are spread out in a special room for a few hours and moistened with water at 40º C air temperature. The cell sap of the leaves comes into contact with oxygen and oxidizes. This gives the leaves their copper-red to brown colour and for the first time the leaves unfolds their unique aroma. Fermentation is essential for the quality of black tea.

Fermentieren

Nach dem Rollen werden die Blätter in einem speziellen Raum für einige Stunden ausgebreitet und bei 40º C Lufttemperatur mit Wasser befeuchtet. Der Zellsaft des Blattguts kommt dabei mit Sauerstoff in Kontakt und oxidiert. Dadurch erhalten die Blätter ihre kupferrote bis braune Färbung und entfalten erstmals ihr einzigartiges Aroma. Die Fermentation ist wesentlich für die Qualität des Schwarztees.

Drying

The leaves finally get into the drying machine, where they are dried with hot air at 80-90º C for about 20 minutes. The cell sap sticks to the leaves and gives them their dark brown to black colour.

Trocknen

Die Blätter gelangen schließlich in den Etagentrockner, wo sie mit Heißluft von 80-90º C etwa 20 Minuten lang getrocknet werden. Dabei bleibt der Zellsaft an den Blättern haften und verleiht ihnen ihre endgültige dunkelbraune bis schwarze Farbe.
